Odor compounds are volatile organic molecules — light enough to evaporate at room temperature and drift straight through the everyday materials most bags are built from. Standard nylon, canvas, and zippers have microscopic gaps and porous weaves that were never designed to stop a molecule this small and this active.
Zip a normal bag shut and those molecules just keep moving, working through the fabric and out the seams. Blocking them takes a material built specifically to trap odor at the molecular level, not just a bag that zips closed.

Activated charcoal works through adsorption: its surface is riddled with microscopic pores that odor molecules physically stick to and get trapped inside as air moves through the bag.
